ChickP Protein Ltd. Develops Prototype Using a Chickpea Protein Isolate, Israel
Israel-based startup ChickP Protein Ltd. has developed a chickpea protein isolate that promises to offer the whole sensory experience of real mascarpone.
It will provide a similar function to dairy by preventing crystallization during the production process – which creates a grainy, icy texture in ice cream. Instead, the innovative protein will feature a creamy mouthfeel similar to dairy ice cream and have exceptional whipping capabilities.
The chickpea protein isolate features a 90 percent protein content. Because it has a neutral taste, it’s a great base to add other flavors to.
